Ingredients to make Asian Chicken Stir Fry

1 boneless & skinless chicken breast, about 10 oz. (cut into small cubes)
1/2 cup cashew nuts
1 small green bell pepper, about 4 oz. (cut into small square pieces)
5 slices ginger
1/4 onion (cut into small square pieces)

Marinade:

1 teaspoon baking soda
1 teaspoon corn starch
1/2 teaspoon rice wine

Sauce:

1/2 tablespoon oyster sauce
3/4 teaspoon soy sauce
3 tablespoons water
3 dashes white pepper powder
1/2 teaspoon sugar
1/2 teaspoon rice wine
1/8 teaspoon sesame oil
Salt to taste

Directions to make Asian Chicken Stir Fry

Step 1:

1.Marinate the chicken meat with the baking soda for 15-20 minutes and then rinse the chicken thoroughly. (Please make sure that the chicken is properly rinsed clean of the baking soda.) Pat the chicken meat dry with paper towels and then marinate with the rest of the ingredients for 15 minutes. Mix the sauce together and set aside.

Step 2:

Heat up a wok with 1 tablespoon of cooking oil and stir-fry the chicken meat until the color turns white or half-cooked. Dish out and set aside. Add another 1 tablespoon of cooking oil into the wok and add in the ginger slices, bell peppers and onions.

Step 3:

Stir-fry until you smell the peppery aroma from the green peppers and add the chicken meat back in. Add in the cashew nuts and do a few quick stirs.

Step 4:

Add in the sauce and stir continuously until the chicken meat is cooked and well coated with the sauce. Add salt to taste, dish out and serve the Cashew Chicken hot with steamed white rice.

4 boneless skinless chicken breast halves
2 tablespoons butter, melted
1/4 cup hot pepper sauce
5 tablespoons blue cheese, crumbled

Directions to make Chicken Cheese Packets

Step 1:Preheat the oven to 400 degrees. Pound the chicken breasts down to a 1/ inch thickness. In a large glass bowl, make the marinade by mixing together the butter and hot pepper sauce. Add the chicken into the marinade, turning to coat; cover and refrigerate 15 - 30 minutes.
Step 2:Remove the chicken from the marinade and spoon 1 tablespoon of the blue cheese onto the center of each chicken breast. Fold in the sides, rolling the chicken around the blue cheese. Secure with wooden picks. Set the temperature control at broil or 450 degrees. Arrange the oven rack so the chicken is about 8 inches from the heat. Broil the chicken for about 5 minutes or until brown.
Step 3:Remove the wooden picks from the chicken. Arrange lettuce and chicken on platter. Garnish with celery and remaining blue cheese.

Lemon juice
8 Boneless chick breasts
1 tb Coriander; whole
1 tb Cumin; whole
4 oz Ginger; grated
1 tb Garlic; crushed
1 ts Cayenne pepper
1 qt Unflavored yogurt
2 sm Bunches radishes; julienned
16 Scallions; washed, trimmed,and cut in half into 3 inch lengths
4 Limes; quartered

Directions to make Breast Of Chicken with Scallions and Fresh Limes

Step 1:Sprinkle a small amount of salt and lemon juice over chicken and allow to stand at room temperature for 30 minutes.
Step 2:In a preheated 350 degree oven, toast coriander and cumin on a baking sheet for 5 minutes. Allow spices to cool and crush in a blender or with the bottom of a heavy pot. Combine coriander and cumin with ginger, garlic, cayenne, and yogurt to make a marinade.
Step 3:Dip chicken breasts into yogurt mixture and marinate, refrigerated for 24 hours. Turn occasionally.
Step 4:Broil marinade-coated chicken 5 inches from heat source, about 8 minutes. Turn and broil other side until tender, 6 to 8 additional minutes.
Step 5:Cover the serving plate with a thick layer of julienned radishes, place 2 pieces of chicken on top, and garnish each plate with four pieces of scallion and two pieces of lime.
